What do you do with all that leftover corned beef??  Well, there is a breakfast restaurant in our area that specializes in Bennies.  Oh, my favorite!  Their variety of Bennies (Eggs Benedict) opens the door to new ideas.  So, why not a New Years Bennie?  Greg made yeast rolls, so slicing one in half and making “stovetop toast” (butter in a skillet) will be a good substrate, with Havarti and parmesan, corned beef, topped with a poached egg and sour cream with chives sauce instead of Hollandaise.

Well, we were out of Havarti, but WOW!  We have a new New Year’s tradition!  Add a little Bavarian style saurkraut!

HAPPY NEWF YEAR!

It’s a lovely 2nd day of the New Year in the outskirts of the Ozarks, nice enough to make a Newf happy and nice enough for a human to enjoy a walk with the Newfs still.  The sun is setting, and the day has been brilliant.

As we walked down the road, Banner was saying, “Can’t you make this thing (the three of us) go any faster?”, with Jade in a gait and me in a fast walk saying “Back!”, as the little girl sprung backward into position, then surged forward again immediately.  It’s not always easy to walk multiple dogs, who have multiple “comfort speeds”, while keeping up enough that we all get our exercise and at the same time trying to combat a native habit of “speeding”.  This isn’t my first rodeo, and I’m just determined to succeed as Banner is.  However, it is nice to have this problem as opposed to the other – one who is reluctant.

At the end of the year, my laptop is suffering from the same issue I am:  it’s “waistline” is getting snug.  So, I took this opportunity to catch up with backups and have started the clean-ups.  That saying about filling a void really does apply to hard drives.  Even when you try to stay organized, they still fill up.  While perusing some older folders, looking for some photos, I ran across one of Greg with three Newfs on leash during a walk while we were camping:  Brit, Parker and Shelby.  I keep reminding myself that I can handle three at a time, so what’s the big deal about wrangling one small Newf with a lot of energy?!  She still looks like a peg-leg pirate, with the coat on one rear leg having been shaved for the TPLO surgery.  It’s safe to say that she has regained the use of that leg well, even though she points her toe out more now.  Each time she moves back into position, she looks at me and smiles.  She is a very happy girl.  Then she charges on!  Today I’ll give her some room for enthusiasm.  It is a lovely day, and she has been in party sprits since Wednesday.  I do enjoy enthusiasm.  And we’ll keep practicing.  Or negotiating.  But it is easier to win the negotiation when there is one human per Newf.  ; )

It’s Christmas!

Each Christmas begins with Christmas preparation.  This sometimes starts on the weekend of Thanksgiving, depending on the lighting and weather, since our first step toward getting ready for Christmas is to take a Christmas photo.

In years past, long before digital cameras were available, this could require many rolls of film and the assistance of a volunteer.  One year, it was a new-found horse friend who wasn’t well-advised of the job duties in advance.  Another year, it was someone walking through the park with a nice camera.  On one year, the weather had been very nice, so that the arched entrance to the park was still thick and green from the wysteria vine, and it formed a wreath-like appearance for two Newfs on a couple of grooming tables.  Opportunity is where you find it, as is adventure.  All you need to do sometimes is look up.

When multiple subjects are involved, getting a smile without eyes closed while all subjects look at the camera and are in the field of the camera is usually a challenging task, unless you have support from someone with special talent.  We learned some tricks, like throwing something up in the air in front of the arrangement of subjects, when we used film with a delay on the shutter.  This worked pretty well.  There are a number of well-recorded memories from this activity, and I am very happy to have those.

When we first began the practice of setting up Christmas letters, it took some practice, and more practice.  I think we had 12 rolls of film invested in the first letter!  We got better, and the Newfs matured, until each next young thing came along.

Banker was a fun subject.  Well, he was fun in every aspect of life.  A friend who helped for his first Christmas photo shoot had fun being the photographer.  Santa hats were good tug-of-war objects, and while he enjoyed climbing onto the hay bales for that one, he didn’t want to simply sit there and look pretty.  For another Christmas, we decided on a Santa’s Helper theme, and the Newfs were supposed to wear big red ribbons around their necks with bells.  Banker was always up for something that may be fun, but he didn’t like having to wear that ribbon.  As soon as we had the Newfs ready for a picture, and sat down with them, he would very quietly, very quickly pull it off.  One of those photos shows his detest at having to wear that ribbon – another treasured memory.

We had learned from the dog show and horse show photographers how to toss something up and let it fall to get their attention, which still required good timing to get their heads in the right position (not up, down or sideways).  Of course, when a toy was thrown, a Newf in party mood wanted to go get the toy, and when it was Banker, Parker was right behind him.  Eventually we tried tossing objects that generated less excitement. First we tried sticks, but those were still exciting, then keys, which wasn’t such a good idea when we took one photo among the fall leaves.  As Parker matured, we began to do Newf-only photos.  The fewer the subjects, the easier it is to get a usable photo.  One year there were some lovely backgrounds in town, after having some nice late weather again.  It was easy enough to put one Newf in a down and one in a sit, or put both in a down, and get some good photos.

Somehow, the Newfs seem to know that there is a party in store when we start staging an area for taking Christmas photos, even when it is their first time to participate.  They know when the weekend is coming, they seem to know when some holidays are coming, and then there is Christmas!  “Presents” begin arriving in boxes (again, need to teach Newfs how to read labels), decorations go up, the kitchen smells good and the humans are collaborating with joyful sounds on upcoming plans and presents.  Perhaps, however, the photo session is the first cue.  This year, we decided to give Jade the sofa (her favorite spot – the whole sofa, not just a “spot”) for our 2015 arrangement, and get Banner to lie next to us on the floor or in a lap.  Of course, to Banner that seemed like an invitation to put your feet in the air and do some break-dancing, Newfie style!

After looking through many photos, this year’s choice was one with Jade on the sofa and Banner doing a somersault, head-down, into Greg’s lap.  She was right!  Who needs composure for a photo anyway?

CORN CHOWDER

Last month I was at a restaurant in Maryland that served grilled corn chowder.  It was “Wow!” delicious.  I’m not the kitchen person at our home, but this stirred a longing to cook that I had not felt in a long time.  That, coupled with the chill in the air,  and being left to fend for myself in the kitchen for almost 9 days, caused me to look for hot soup recipes, and I started with an old favorite!

Jade was dubious about me working in front of the stove, with good reason.  The previous week I had burned something that created a pervasive odor in the cabin for days.  However I was able to successfully produce a pot of corn chowder that lasted for 3 days, without burning anything.  Whenever I put something on the stove and walk away, she will come to let me know that I should be staying at the stove.  She’s a step ahead of the boys.  They would come when something started to sizzle.  She feels that a margin of safety is in order, which seems warranted.

So this is how the recipe came out:  Instead of being “naked”, I used cream.  It starts like French onion soup (my main variation).

1.  Slice a large onion into a large sauce pan with butter.

2. Once the onions are caramelizing add diced ham.  Brown sugar or molasses cured him has a better flavor match for this stew.

3. Also, while the onions are caramelizing, dice three medium to large potatoes and pre-cook those in the microwave for about 8 to 9 minutes with a lid on.

4. Add the potatoes to the ham and onions, and pour in about a cup to a cup and a half of half and half.  If you can afford to be exta calorie daring, use some heavy cream also.  This improves the consistency.  Some types of potatoes exude enough starch to thicken the chowder.  Otherwise if you want a thicker liquid you may need to add a flour or corn starch solution.

5. Add approximately 12 ounces of frozen sweet corn.  You may also want to add a little more salt than what comes from the ham.

6. Let the pot simmer for about 30 to 45 minutes.

When you’re ready to eat some, finely dice a fresh green pepper and add that on top of your dish, along with a little ground cayenne pepper.  Crackers are optional.  The first sip of the broth should knock your socks off.  The flavors from the caramelized onions and the smoke and caramelized flavors from the ham merge with the butter and cream in a way that is indescribable.
